Had a wonderfully light and refreshing chicken dish last night. The original recipe for Lime Chicken with mango salsa is great, but
this time around I tried a few variations on the theme. I couldn’t find either Roma tomatoes or Serrano peppers at my local grocery store.
I replaced the Romas with Kumato brown
tomatoes. I replaced the fresh Serrano with cayenne pepper from the pantry. I also chose to replace the rice with lemon couscous. While the recipe calls for only four chicken breast, there was plenty of leftovers also
which I’ve paired with turkey burgerS and I look forward to trying with a Bobby Flay Morracan rub which Marcia prepares with talapia & chicken.
