One of the jewels of Carribean dining,  L’Auberge Gourmande is among the brightest stars in the firmament of St. Martin dining.  They achieve this while offering doting service and approachable prices.  I started with a decadent fois gras – duck liver, pan sautéed with caramelized pears in a Sauternes sauce.  The main was the daily special of sea bass with lobster stuffing.  We shared an awesome apple tart with a flambé of calvados.
