Spatchcock Chicken with Roasted Potatoes and Roasted Broccoli

Found a great recipe for brined and spatchcocked chicken last weekend on Buzzfeed.  While there was a bit more salt than I’d want to use routinely,  the chicken was extremely moist  and flavorful.  The skin was crisp and savory.  Went with two of our stand-by sides roasted Irish and sweet potatoes with vidalia onion, green and yellow bell pepper and Marcia’s roasted broccoli.  Best of all, since it’s a whole chicken there was plenty left over for lunches and the freezer.
