Day 6 stared with an amazing breakfast at Red Ginger. Day 7 started with an equally amazing breakfast at their sister restaurant, Blue Water Grill. Breakfast for this morning was a bananas Foster waffle. In the traditional preparation bananas are sautéed in butter and brown sugar with cinnamon and finished with rum and banana liqueur flambé. The waffle was light and served with bananas Foster topping and a healthy portion of whipped cream in lieu of the ice cream. To call it a champion of breakfasts would be a gross understatement. It rivals “Day 6’s” chunky monkey pancakes for breakfast of the week! While I didn’t note it in yesterday’s post, this morning’s coffee and yesterday’s coffee were the best cups of Joe of the week. In addition to the coffee. Both of these establishments are tied for serving the best sides of bacon with high carb, high calorie breakfast dishes.

After a great breakfast, we headed back to the resort for more time by the pool. We lunched on chicken strips and fries at the resort restaurant and headed right back to the chaise lounges on the pool deck.

We returned to Red Ginger for dinner. While some of our fellow patrons we bit loud, the food didn’t disappointed. We shared an order of empanadas to start. My main was a blacked red snapper served over mashed potatoes with a shrimp-infused brandy cream. The spiciness of the snapper was perfectly accentuated by the rich and flavorful sauce. For dessert we shared a trio of creme brûlées — coconut, mango and pineapple.
